The altitude, the volcanic soil, the cool nights and warm days: everything conspires to produce a bean with natural sweetness, bright floral acidity, and a clean finish that no amount of heavy roasting should mask. At Brewstation, we source directly from small cooperative farms, ensuring that the farmers receive a premium that reflects the back-breaking labor of hillside cultivation. We roast in tiny 5kg batches to maintain absolute control over the chemical transformation of the sugars.
